Rum Production: The Journey from Molasses to Magic

The allure of sweet, complex flavours encapsulated in our spirits - whether it's rum, moonshine, or cane spirit - have enchanted our loyal customers. But did you know the journey from molasses to your glass is one of intricate processes, challenges, and rigorous optimisation? Today, we're sharing how we at Tom Likker create our signature spirits.

At the heart of our spirits are molasses, a byproduct of the sugar production. Locally sourced from the large sugar cane fields just down the road, we ensure our molasses carry the natural richness and signature flavours of the Gold Coast terroir.

The process begins with fermentation, where we transform the sugars in the molasses into alcohol. The delicate dance of controlling temperatures, nurturing the yeast, and managing time results in a 'wash' ready for distillation.

Depending on the product, we use a pot still or column still distillation. Our Molasses Moonshine and Cane Crescendo are crafted using this careful process, each with its unique character. The pot still produces robust and flavourful spirits, suitable for our Moonshine, while our column still offers a cleaner, more refined output, perfect for the smooth Cane Crescendo.

Creating these spirits is not without challenges. The art of distilling demands constant vigilance and fine-tuning. But overcoming these challenges is part of the satisfaction of crafting our unique offerings.

Some of our rums embark on the journey of aging. Nestled in casks, they mellow and mature, gaining depth, complexity, and a delightful array of flavours from the wood.
